Rocket & Salmon salad
Ingredients
Fresh rocket leaves, washed
Smoked salmon, cut into strips
Diced bread (for croutons)
Fresh carrots, grated
Spring onion
Black olives, stoned
For the vinaigrette:
1/2 tsp English mustard
1 tbsp white wine vinegar
1/2 tsp honey
salt and pepper
1 egg cup olive oil
squeeze of lemon
Method
Shallow-fry the bread in olive oil to make crispy croutons. Toss the rocket leaves, salmon, grated carrot and spring onion together in a salad bowl. Add the croutons and olives and dress with the homemade vinaigrette.
