Sweet roasted fennel

Sweet Roasted Fennel.


Ingredients


3 Fennel Bulbs
1 Lemon halved
3 tblsp Olive Oil
2oz Melted Butter
1 tsp caster Sugar
Salt/Pepper/Sprigs of Thyme

Method


¼ Fennel length ways – place cut side up in a roasting tin. Drizzle with lemon juice/oil and smear with butter.
Season well, sprinkle with sugar, thyme and lemon halves. Cover with non-stick paper and bake at 200.c for 30 mins. Uncover and bake for a further 30mins (until the fennel is tender and slightly charred)

Serve as a side dish.

It goes particularly well with pork and fish.
