French Bean & Tuna Pasta salad

Ingredients


French beans
Equal quantity of short pasta
Can of Tuna
Couple of anchovies
Clove of Garlic
A few back olives, capers & sultanas
Olive oil
Flat parsley or basil or tarragon

Method


Cook a couple of handfuls of short pasta, such as penne, until just done.Slice some French or runner beans as in the above recipe, and cook briefly in boiling salted water.You should aim to have roughly equal quantities of pasta and beans.Stir in a can of good quality tuna, a couple of chopped anchovies, and a clove of crushed garlic.Add some chopped black olives, some capers, a few sultanas (yes, I know it sounds odd, but it tastes vaguely Sicilian), plenty of olive oil, and some chopped fresh herbs. I like flat-leaf parsley best with this salad, but basil and tarragon also work well.
