Annie's Bean Salad
Ingredients
French beans
Sunflower seeds, sesame seeds, pine kernels, flaked almonds and pumpkin seeds
Olive oil
Lemon juice
Goats cheese or Feta
Mint or parsley
Method
Toast a mixture of nuts and seeds in the oven or a dry frying pan until golden. Any combination of sunflower seeds, sesame seeds, pine kernels, flaked almonds and pumpkin seeds works well.
Cook some sliced French or runner beans in boiling water until just done, and toss them in a mixture of olive oil, lemon juice, salt and pepper. Stir in the nuts and seeds, pile into a serving dish, and crumble some goat’s cheese or feta over the top.
Finish with some finely chopped mint or parsley.
