Red Cabbage German Style

Serves 4

Ingredients

1 Red Cabbage

1 whole onion - with up to 12 cloves pushed into it

6 Back peppercorns

Cider vinegar to taste (up to 1/3 cup upwards)

Brown sugar to taste (about 2 tablespoons)

Method

Slice the red cabbage up into strips, put in a heavy saucepan with a cup of water and bring to the boil for 10 minutes (this will seal the colour) and the onion (cover with cabbage) and peppercorns and more water to taste if necessary. Turn heat down and simmer until the cabbage is soft (about 15 minutes) Mix in the brown sugar and add vinegar to taste - boil well. You can leave this to simmer for as long as you like, adding water if necessary. Some peope the put it in the oven (150c) and cook for another hour.

It's best the next day. For an authentic taste, warm it up by putting in a frying pan and frying with goose fat.
