Braised red cabbage

Braised red cabbage

(serves 4-6 oven at 160c - fan)

Ingredients

1 medium red cabbage sliced and steamed for 1 minute.

2 cooking apples sliced and peeled

2 red onions, sliced

1 clove garlic, sliced

1 knob butter

2 tbsp dark soft brown sugar

3 tbsp white wine vinegar

salt and pepper

Method

Sweat the red onion and garlic, until golden. Add vinegar, sugar and seasoning to red onion mix. Layer in a heat proof oven dish onion mix, cabbage and then apples. Add a little watr to prevent from drying out.  Cover dish with foil and bake in the oven for 1.5 hours.
