Baked Artichoke
Ingredients
olive
oil
285ml double cream or crème fraiche
juice of 1 lemon
good handful of fresh thyme
2 cloves of garlic
salt and pepper
2.5 handfuls of grated parmesan cheese
2 good handfuls of fresh breadcrumbs
750g
Jerusalem artichokes, peeled and slice to 0.5cm
Method
Preheat oven to 220oC, 435oF or Gas 7.
In a bowl mix the cream, lemon juice, garlic, half the thyme
and most of the parmesan and season to taste.
Throw in sliced artichokes, mix well and put in ovenproof
baking dish.
Mix breadcrumbs with the rest of the thyme and parmesan, add
salt and pepper and sprinkle over top of the artichokes.
Drizzle with a little olive oil and bake for 30 minutes.
