Spicy Kale and Chick-Pea Stew

Ingredients
1 tin of chickpeas
1 pint water
2 large onions roughly chopped
3 large cloves garlic, chopped
2 tbsps olive oil
700g kale (remove toughest stems)
1 tin plum tomatoes
1 tbsp tomato puree
2 tsp chilli powder
1 tsp thyme
1 tsp oregano
1 tsp ground cumin
1 tsp sugar
1 bay leaf
Method
In a large saucepan sautee the onions and the garlic in the
oil over moderate heat, stirring occasionally, until the
onions start to go transparent.
Add the rest of the ingredients; bring to the boil and
simmer, stirring now and then for an hour.
If the stew gets too thick just add more water.
Season to taste.
Variations – this works well with a few good sausages
or tofu chopped into 1” pieces added after the onions.
This is a nice filling autumn recipe that is good with
steamed couscous, rice or hot French bread.
