Hopping
John
Ingredients
1/2lb bacon
Medium onion
500g kale
Water
Tomato paste
Powdered mustard
Fresh chillies or chilli flakes
Sugar
Black eyed peas
Method
Chop 1/2lb of thick cut bacon into 1” strips and brown
in a heavy saucepan.
Add 1 chopped medium onion and around 500g of coarsely
chopped kale.
Sauté until soft and then add 1/2 cup of water, then 2
tablespoons of tomato paste, 1/2 teaspoon of powdered
mustard, 1/2 teaspoon of chilli flakes or 2 fresh chillies
and 1 teaspoon of sugar.
Then add a tin of black-eyed peas.
Simmer for 15 minutes or so and serve over rice.
This is a variation of a traditional dish from the southern
USA, called ‘Hopping John’.
